Recipe: Whole Health Delicious Detox Smoothie

This amazing smoothie tastes so good you won't even realize how good it is for you! Packed with super nutritious ingredients and zesty and sweet fresh flavors, it gives you an energy boost, a gentle system cleansing, and a deliciously summery breakfast on the go - all in one.

(Serves 2.)

Ingredients:

2 green tea bags
2 cups hot water
1 teaspoon fresh grated ginger root
1 tablespoon local honey
1 cup fresh pineapple chunks
1/2 cup fresh or frozen blueberries
1 cup honeydew melon chunks
1 tsp flaxseed
1 lemon, zest and juice

Directions:
  • Put the green tea bags in the hot water and steep for 2 minutes; remove and discard tea bags. 
  • Chill the tea.
  • Pour the chilled tea and all other ingredients in blender and blend on high until smooth and frothy.

Recipe: Homemade Thai Red Curry Paste

Many people when they think of curry are thinking of Indian curry, which has more of a spice flavor - hints of cinnamon, nutmeg, and cloves, and is a richer, heavier taste which can tend to be overpowering. Thai curry, on the other hand, has a completely different taste - it is a light, fresh flavor which goes well with all kinds of meats and vegetables.

Thai curry paste is what provides this flavor, and it's actually pretty easy to make at home. I've made both red and green myself several times. They have different flavors, but many ingredients in common. Once made, you can keep in the fridge in a jar for several weeks, but if you're not going to use it that soon, it also freezes very well and will keep for a long time when frozen. My favorite way to store homemade curry paste is to scrape it into ice cube trays and freeze - then pop the cubes in a ziplock bag, and you can use these easily when needed in recipes (one cube = about 2TB). If you are freezing the paste for storage, you don't need to cook it at the end as shown in the video (I've never cooked mine) - you will be cooking it anyway whenever you use it in a recipe. However, the cooking will help preserve it longer if you are storing it in the refrigerator instead of the freezer.

This video shows you each ingredient you will need for making your own Thai red curry paste, and how to prepare them. They also suggest some substitutions if you can't find all the ingredients. (I have used ginger in place of galangal, and red onions in place of the shallots. You can also use a few leaves of the cilantro, OR dried, ground coriander, instead of the stems.)

There are many different versions of Thai curry paste, but this is a good basic one to start with and will give you a great base for making a number of different Thai curry recipes, including the Red Thai Curry Fish we posted on Wednesday.

Fun Halloween Cooking Ideas

Whether you are cooking a feast for adults for Halloween, or looking for some great kid-approved recipes, there are plenty of resources online for some excellent spooky recipes for All Hallows Eve. There are some basic rules that will help the meal preparation and presentation go a little more smoothly. Hopefully the advice below will help you get through your spook fest and enjoy a great dinner too!

Most people who have a huge Halloween party will find that they will be interrupted throughout the evening with trick or treaters seeking the perfect treat. While we want to enjoy the ghosts, goblins, kings, and princesses gracing our stoop we also do not want to burn the food we are working hard to prepare. For this reason we need to select foods that require little attention during the preparation process rather than foods that are quite time consuming and attention demanding.

Crock pots are a blessing to have around on a night like Halloween. You can start the food cooking well before the little goblins begin their appointed rounds and have the dishes you've prepared kept warm while you're waiting for guests to arrive or doling out treats at your front door. You can even cook normal favorites in the crock pot or cook them on the stove and use the crock pot to keep them warm.

 Some excellent spooky crock pot ideas include spaghetti "veins". Prepare the sauce and the noodles ahead of time separately. Mix the sauce in the noodles and keep them warming together in the crock pot. Meatball eyes are another crock pot favorite. Stuff the meatballs with one stuffed olive eyeball and place in spaghetti sauce. Bat wings (which are actually chicken wings) with your favorite sauce are also excellent in the crock pot. Sloppy Joes can also be prepared and kept warm in the crock pot then served open faced over buns with small triangle cheese slices for eye and a pickle for eyeballs and a large triangle of cheese for the mouth.

Another great Halloween cooking idea is to prepare as much as possible ahead of time. There are all kinds of frightening and ghastly goodies that can be made ahead of time and stored for the big day. Make convenient offerings such as dips that can be made cold and used for veggies, which can also be chopped ahead of time and stored in the fridge for the big day. Cookies can be baked and decorated and stored in advance. Deviled egg mice can be made earlier in the day and stored in the fridge on waxed paper.

The Internet is full of great recipe ideas for delicious and devious Halloween desserts, snacks, and treats. There are far too many to try them all. However, if you have favorite foods that are easy to prepare and a good party food you might want to search the internet for a way of making the food more appropriate to a Halloween theme. For example, you can make your own pizza a little spookier by decorating it with things such as a Jack O' Lantern face made with pizza sauce - use cheese triangles for the eyes and teeth, etc.. There are plenty of things you can do to raise the fear factor even on family favorites if you use a little creativity and give it a fancy name (like spaghetti brains or veins).

The most important thing about Halloween as a holiday is that it gives children of all ages the perfect excuse to use their imaginations and play pretend. The food you cook doesn't have to be too terribly spooky in order to be a perfect fit for the theme of the day. A few simple adjustments, and a lot of imagination can make any meal so much more Halloween worthy in the end.

Crockpot Recipe - Baked Apples

Here in Ohio, summer apples are just starting. While this may sound like a fall recipe, baked apples with a little yogurt actually make a nice, light summer breakfast. Just put them in the crockpot the evening before, and you'll have a tasty treat ready in the morning! Or of course you can have them for dessert....

Crockpot Baked Apples
(Serves 6-10)

Ingredients:

6 large baking apples (Rome or York work well)
2 TB lemon juice
2 TB butter, melted
3 TB brown sugar
1/2 tsp nutmeg
1 tsp cinnamon

Directions:
  • Peel, core, and cut apples in half. Place in crockpot.
  • Drizzle with lemon juice & butter.
  • Sprinkle sugar & spices over.
  • Cover and cook on "Low" 4  hours (or 2 hours on "High."
  • Serve hot, with vanilla ice cream, or cold, with yogurt for breakfast.

Video - High Fiber Muffin Recipe

Here is a quick and fun recipe for some healthy and tasty high-fiber muffins.  Muffins are a great way to get some extra fiber into your diet - they are quick and easy to make, and make an excellent snack or breakfast on the run. If you have a juicer, you'll have lots of leftover fiber - don't throw it away - that's a lot of the good stuff from your fruits and veggies! Instead, use it to make muffins like these. Wow, don't they look delicious?

Recipe - Low-Carb Cabbage Rolls

If you're diabetic, or just looking for a low carb recipe that's still hearty and filling, try this tasty recipe. I've made a variation of this using ground lamb and couscous, and you can also use Chinese cabbage leaves for a slightly different taste. This recipe is slightly more involved, so if you're looking for something fun and a little different, throw this one into the mix once in a while when you have a bit of extra time.

Meaty Low-Carb Cabbage Rolls
(Makes 18 dinner-size cabbage rolls. Serves about 6-8, or 4 with leftovers.)

1 big or 2 medium cabbage heads
1 large onion, diced
2 tablespoons butter
1 lb. lean ground beef (if you prefer it leaner, try ground venison instead of either the beef or pork)
1/2 lb. ground pork
1 1/2 cups cooked brown rice
1 teaspoon finely chopped garlic
1 teaspoon salt
1/4 teaspoon black pepper
1 cup beef stock
Sour cream for garnish (optional)

Instructions:

1. Preparations:
  • Preheat oven to 350 degrees.
  • Carefully cut the core out of the cabbage and clean away any undesirable leaves, then wash head of cabbage under cold running water.
  • Bring a large pot of fresh water and salt to a boil, then lower whole head of cabbage in, cover the pot, turn heat to a simmer, and cook for 2 to 3 minutes or until the cabbage head softens enough to be able to pull the leaves off individually. 
  • Remove cabbage head and let cool on a rack or colander long enough so you can handle it. This recipe will make 18 dinner-sized cabbage rolls, but depending on the size of the leaves, you may have more or less. Take off as many leaves as you can before the difference in size is too great. Sometimes two cabbage heads works better than one in order to get enough similar-sized leaves off the head.
  • After you've removed all the leaves you want, take a small sharp knife and cut a triangle shape along the thick center stem part of each leaf to remove it, making sure you leave the cabbage leaves intact. Set aside.
  • Cut up the cabbage that is leftover and throw it into a large baking dish or Dutch oven.
2. Filling & Stuffing:
  • To make filling, put the onion and butter in a large skillet over medium heat and cook until onion is softened; then let cool.
  • In the cooled skillet with onions, crumble up the beef and pork and stir in the garlic, salt, and pepper; mix together but don't overwork it so the meat will stay tender when cooked.
  • Take about 1/2 cup of the meat mixture (more or less depending on the size of the leaf) and put on a cabbage leaf, roll up, tucking in the ends, until the meat is sealed inside the leaf.
  • Put the cabbage roll (seam side down) on top of the chopped cabbage in the baking dish and repeat with all the remaining cabbage leaves, arranging each roll in baking dish. If you don't want to put your cabbage rolls on top of each other, you may have to use two baking dishes if yours isn't large enough.
  • Pour the beef stock evenly over the cabbage rolls, season to taste with salt and pepper.
  • Cover and put in preheated oven and bake for 1 hour.

Serving Suggestions:

This can be served as a main dish with the cut-up cabbage served underneath the rolls. You can prepare a sauce by stirring together the juices from the pan with some sour cream, then pouring over the cabbage rolls on each plate.

Or, make the cabbage rolls smaller (using smaller heads of cabbage to get smaller leaves) and serve as a tapa or appetizer on a buffet. Serve with a variety of dipping sauces.

For a party, you can make a batch or two and freeze them.  Just reheat in a low oven and serve.

Video - Easy Szechuan Shrimp Stir Fry

One of the great things about Chinese cooking is that it's fast! Most stir-fry dishes only take a few minutes, as it is important to cook the vegetables only until tender-crisp, maintaining more of the flavor and the nutrients. Here is an easy from-scratch Szechuan recipe for a quick dinner in 20 minutes or less - using fresh, easy-to-find ingredients you can pick up at just about any grocery store. I've listed the ingredients below the video, as he's not very clear on the amounts for some of them in the video itself. It looks so delicious I'm drooling just watching the video - will be trying this one soon!

Video - Fresh Fish Sauted with Lemon & Butter

Here is another great, simple, easy and delicious recipe for fish - he uses haddock in the video, but you can substitute any other white fish, tilapia, salmon, or pretty much any other kind. This one only takes a few minutes, and includes just a few simple ingredients, so it's great for a quick throw-together type of dinner when you're short on time or just don't feel like cooking something fancy.

Recipe - Leftover Spaghetti Pizza

Here is a fun one that the kids will love! (What kid could resist a pizza made of spaghetti?) :-)  You can use whole grain pasta to make it healthier, and she gives some suggestions at the end for additional veggies you could add as well. It can be made with or without meat, and of course you can try different kinds of cheese too. Feel free to experiment, and be creative, but this is a great way to use up leftover spaghetti, in a way that is healthy and delicious for the whole family.

Recipe - Easy Summer Black Bean Burritos

I've been pretty much living on these for the past couple of weeks!  They're just so easy, delicious, fast, and really don't require any cooking - they are perfect for a quick summer lunch or even dinner. The only thing is - they're so simple I almost hesitate to use the word "recipe"!  :-)

But here it is - a quick, healthy, tasty, and minimal-effort weeknight dinner perfect for those summer evenings when you just don't feel like cooking. This can also be a fun one for the kids -  let them pick their own fillings, and help assemble them - it will give them a sense of ownership of their food, and encourage them to eat some veggies!

Easy Summer Black Bean Burritos: (Makes 4; May be adjusted as needed.) 

Ingredients (feel free to mix it up and add your own!):
1 can black beans, drained and rinsed (or 1 1/2 cups cooked black beans - easy to cook ahead and refrigerate until needed - and feel free to substitute other types of beans!)
Several leaves fresh lettuce, rinsed and torn
1/4 cup sour cream
1/4 cup salsa
4 large (burrito size) flour tortillas
1 cup diced tomatoes (optional)
1/3 cup chopped cilantro (optional)
3 TB slivered sweet or red onion (optional)
1/3 cup shredded cheese (optional; cheddar, monterey jack, or colby are all good choices, or even crumbled feta)
Salt, to taste

Instructions:
1. Heat tortillas in toaster oven or dry skillet on low-medium heat until warm and flexible.
2. Heat beans in microwave about 30 seconds (or just leave them cold - they are good this way too).
3. Place tortillas on plates, divide beans evenly among them, spreading along the center. Add lettuce, other toppings as desired, and spoon salsa and sour cream over the top. Add a sprinkle of salt if desired.
4. Wrap tortillas around fillings and eat!

These have slivered sweet onions, & lettuce & cilantro from my garden.
Feel free to be creative with these!  I listed a few optional suggestions above. I have had them both with and without any of these optional ingredients - they are always good. Feel free to try different herbs, cheeses, and other condiments. Corn could also be a good addition, and maybe olives? If you want to get really crazy, sprinkle with a dash of cumin, chili powder, or another seasoning. Your options are really limited only by your imagination, and what you have on hand.

Healthy Lunch Ideas

Here are some great ideas for healthy lunches, as well as a couple of recipes. Remember, it may seem like a chore at first to pack a lunch every day, but once you get in the habit of it, it will just be another thing you do to prepare for the day. If you are rushed in the morning, try preparing your lunch the night before, or, if you cook a large quantity of something, do like I do, and package the Raw vegan lunch. Cajun Gumbo Recipe

It's Cajun week here at Cooking From Scratch, and here is an amazing gumbo recipe I found, that will really get you in the Cajun mood! Gumbo is one of my favorites (actually I am realizing I haven't made it in a while, so hopefully this one will inspire me to whip some up), and I've made many different versions of this tasty and hearty dish - some of which were easier than others, but all of which were Signature gumbo from Bozo's Seafood Restaurant...Image via Wikipediaexcellent. (Mine usually looks more like the picture below, than the one on the recipe page.)

As we discussed on Monday, Cajun cooking is really an art, so make it your own, and try varying levels of spiciness, different types of meat and seafood, or other additions that strike your fancy.

Homemade Pizza Recipe

Here is a great looking recipe for making your own pizza, with a from-scratch sourdough crust (if you don't like sourdough, just make a regular dough). This one is a bit more advanced, since you are making the crust from scratch, but it looks like it will be worth the extra effort. There are lots of great step-by-step pictures as well, so be warned that it will make you hungry!  If you've ever wanted to try homemade pizza, this one looks like it's worth a try.
