Recipe: Golden Rum Molasses Apple Compote

This perfect fall dessert recipe makes a warm, light, end to an autumn evening meal, filled with the fragrances of fall. Apples and spices pair with rum and butter to to bring all the flavors of the season to your plate. Try this one with fresh apples from the farmer's market, or pick them yourself!

Golden Rum Molasses Apple Compote

Ingredients:

2 Tbsp light rum
3 apples, peeled, cored, and coarsely chopped
2 Tbsp molasses
2 Tbsp unsalted butter
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp allspice
dash of grated fresh nutmeg
pinch of kosher salt

Directions:
  • Put the ingredients in a large saucepan; stir to combine.
  • Place saucepan on low heat, set the pan cover on, tipping slightly to allow some steam to escape.
  • Simmer very slowly for about 20 to 30 minutes or until the apples are tender, stirring a few times while cooking.
  • Serve over rich vanilla ice cream in small dessert bowls or in the bowl with a dollop of whipped cream.

Recipe: Sausage & Apple Breakfast Casserole

Feed your kids' sweet tooth with a healthy breakfast option with this delicious, sweet and savory casserole. Plenty of protein, together with apples, cinnamon, and whole-grain bread make this a breakfast that will stick to your ribs, and keep your kids alert and energized until lunchtime.

Sausage and Granny Smith Apple Breakfast Casserole

Ingredients:

1 package natural pork sausage roll
6 cups whole grain bread, cubed
3 cups whole milk
10 eggs (free range/organic if possible)
1 teaspoon vanilla
1 teaspoon salt
2 large Granny Smith apples, peeled and chopped 
1 teaspoon cinnamon
2 tablespoons sugar
2 cups cheddar cheese, divided 

Directions:
  1. Grease a 9x13 inch baking dish while preheating oven to 325 degrees.
  2. In a large skillet, brown the sausage and drain. Set aside. 
  3. In a large mixing bowl, whisk together the milk, eggs, vanilla and salt. 
  4. In another large mixing bowl, mix together the apples, cinnamon and sugar. Make sure the apples are well coated. 
  5. In the prepared baking pan, layer half the bread crumbs on the bottom and then half the sausage, half the apples and then 1 cup of cheese. Continue to repeat layers until ingredients are gone. 
  6. Take the egg mixture and pour evenly over the layers. 
  7. Bake for 1 hour or until hot and bubbly.

Recipe: Purple Cabbage Avocado And Apple Salad

This makes a perfect healthy winter salad, with fresh, crunchy cabbage and apples, and creamy, healthy avocado accented with lemon juice and mustard for a tangy kick. To vary the color and flavor, try green cabbage instead of red, or mix the two for a lovely multi-colored dish.

Be sure to read the ingredients on the mustard you choose.  There are many variations so you need to check that the one you use fits your diet - avoid those with added sugar if possible. This is a very diet-friendly recipe for most diets.  However, if you are not eating fruit right now, you can eliminate the apple. If you do, try to substitute something else for crunch.  Nuts may be a good choice, again, depending on your diet.

Purple Cabbage Avocado And Apple Salad

Ingredients:

8 cups very finely shredded purple cabbage
1 ripe avocado, peeled, pitted, and cut into thin wedges
1 Granny Smith apple (or other tart green apple)
1 lemon, juiced
2 Tbsp olive oil
2 tsp fresh lemon juice
1/2 tsp coarse ground mustard
1/4 tsp kosher salt
1/8 tsp black pepper

Directions:
  • Put cabbage, avocado, and apple in large bowl and drizzle with the juice from one lemon.
  • In a separate small bowl, put the remaining ingredients and whisk together briskly until frothy.
  • Spoon salad onto cold salad plates and drizzle mustard dressing over as desired.
  • Serve immediately.  (The lemon juice will help keep the avocados and apples from browning.)

Gluten-Free Recipe: Sweet Spiced Apple Lentil Casserole

This hearty gluten-free recipe is like curry in a casserole - flavored with apples, coconut, and spices, it brings an oriental twist to regular old lentils. It makes a great stick-to-your-ribs meal for a cold winter night!

Sweet Spiced Apple Lentil Casserole - Gluten Free
(Serves 4-6.)

Ingredients:

1 1/2 cups lentils, rinsed and drained
2 1/2 cups water
2 Tbsp cooking oil
3 cloves garlic, grated
1 stalk celery, diced
1 large onion, diced
1/2 tsp salt
1 cup shredded coconut, unsweetened
1/2 tsp cinnamon
1/2 tsp powdered ginger
1/2 tsp turmeric
2 large green apples, cored/diced

Directions:
  1. Put lentils in a large pot with water, cover and simmer gently for 30 to 40 minutes or until tender.
  2. Meanwhile, put oil in a heavy skillet, add all the remaining ingredients (except apples) and cook over low heat, stirring often, until vegetables are tender; about 15 minutes. Add the apples to the skillet, stir, and cook for 10 minutes more or until apples are softened slightly; remove skillet from heat.
  3. When lentils are cooked and tender, add the lentils to the mixture, stir, then turn out into a large casserole dish.
  4. Bake (uncovered) in 350 degree oven for 20 minutes or until mixture is bubbling hot.
  5. Serve immediately.

Leftovers Recipe: Cranberry Apple Sweet Potato Crisp

The sweet potato casserole is often a favorite, so you may not always have many leftovers, but if you do, it sometimes seems lacking on subsequent days. Here is a creative and interesting way to dress up that leftover casserole, and make it shine anew. The tartness of the apples and cranberries provide a perfect foil to the sweet creaminess of the leftover casserole, and the addition of a crunchy topping provides textural interest as well as tantalizing your taste buds!

Cranberry Apple Sweet Potato Crisp

Ingredients:

4 cups leftover sweet potato casserole
1 pkg (8 oz) cream cheese, room temperature
1/4 cup brown sugar
1/4 tsp cinnamon
1 cup chopped tart apples
2 cups leftover cranberry orange relish
1/2 cup chopped walnuts
3 Tbsp butter
3 Tbsp flour
2 Tbsp brown sugar
3 cups oat or corn flake cereal

Directions:
  1. Preheat oven to 350 degrees. Butter a shallow casserole dish.
  2. Put the leftover sweet potatoes in a bowl with the cream cheese and mix with an electric mixer until smooth.  Add the brown sugar and cinnamon and mix again until smooth. Note: If your sweet potato casserole is very sweet, you can omit the added brown sugar and cinnamon.  If your sweet potatoes are unsweetened, then be sure to add these ingredients. 
  3. Layer the sweet potato mixture into the casserole dish, distributing evenly.
  4. Sprinkle the apple pieces evenly over the top.
  5. Spoon the cranberry orange relish evenly on the top.
  6. Sprinkle the walnuts over the top.
  7. Put the butter, flour, and brown sugar in a bowl and cut with pastry cutter or with forks until mixture is crumbly. Add the cereal flakes and toss until combined.
  8. Sprinkle this mixture evenly over the casserole.
  9. Bake, uncovered, in preheated oven for 30 to 40 minutes or until the casserole is hot and bubbly and the crunchy topping is lightly browned.

Recipe: Blended Fall Fruit And Veggie Soup

This soup combines sweet and savory flavors of fall into one special and unique warming dish with layers of autumn flavor. Sweet potatoes, apples and pears lend sweetness and richness to the earthy taste of carrots, celery and zucchini, and the kick of curry brings everything up a notch to something really special! Check this one out this fall and it'll warm you inside and out.

Blended Fall Fruit And Veggie Soup
(Serves 4.)

Ingredients:

2 tsp Olive oil
1 stalk celery, finely chopped
1 med onion, diced
1 tbsp curry powder
1/2 lb carrots, scrubbed and diced
1/2 lb zucchini, washed, sliced lengthwise, seeds removed, and diced
1/2 lb sweet potatoes, peeled, diced
1 med Bartlett pear, cored, and coarse chopped
1 Small Granny Smith cored, and coarse chopped
3 1/2 cups chicken or vegetable broth
1/2 cup fresh parsley

Directions:
  1. In a large soup pot or Dutch oven, heat the oil over medium heat until sizzles when a drop of water is added.
  2. Add the celery to the pot and cook until just starting to soften.
  3. Add the onion to the pot and continue to cook until both the celery and onion have become transparent.
  4. Add the curry powder and stir to combine.
  5. Add the vegetables, fruit, and parsley, stir to combine, then pour in the broth.
  6. Bring the soup to a boil, then immediately turn heat down to low, cover the pot, and allow soup to simmer for 15 to 20 minutes, stirring occasionally and watching so it doesn't boil.
  7. To create a smooth, blended soup, allow soup to cool slightly, then transfer soup in small batches to blender and blend until desired texture is reached.
  8. Pour back into soup pot and reheat over low heat until just hot, not boiling.
  9. Serve with a dollop of creme fraiche, sour cream, or yogurt.

Recipe: Smooth Spiced Butternut Squash And Apple Soup

Sweet, spicy, and tangy, this creamy and delicious soup combines the best of fall into a smooth and rich tasting soup. Most of the ingredients should be easy to find at your local farmer's market or in your CSA share this time of year. Using butternut squash gives the soup a creamy richness even without using any cream, so if you're looking to cut some fat and calories, this simple autumn soup fits the bill and still satisfies!

Smooth Spiced Butternut Squash And Apple Soup
(Serves 4-6.)

Ingredients:

2 large butternut squash
2 sweet ripe apples
3 Tbsp butter
1 Tbsp basil
2 tsp ground coriander
1/2 tsp onion powder
1 Tbsp Turkish or Spanish saffron (safflower blossoms)
1/4 tsp allspice
pinch ground cloves
1 1/2 tsp salt
1 tsp ground black pepper

Directions:
  • Wash the whole squash, then cut it in half, then into chunks, removing any seeds or string first; bring a big pot of water to a boil, drop in the squash and let cook for 10 to 15 minutes or until fork tender.
  • Meanwhile, peel the apples, core, chop, and put in a glass bowl (without water) and microwave for 3 to 5 minutes or until you can mash them with a fork. You can also just put the chopped up apple in a small saucepan over low heat and cook until soft, just watching it so it doesn't burn to the bottom.
  • Remove the squash from the cooking water, let cool slightly, and scrape the edible portions from the outer rind, putting the good part in a bowl. Save the cooking water in the pot.
  • Put the squash in your food processor and blend until smooth; then add smashed apples and process until both are pureed and smooth.
  • Put the squash-applesauce puree into another soup pot and add enough of the reserved cooking water to make a thick soup. You can always add a bit more as you cook the soup to thin it out more.
  • Add the seasonings to the soup, stirring to combine.
  • Turn burner on to low under your soup pot, slightly tip a lip on the pot, and simmer slowly for about 5 to 10 minutes, just so the flavors combine.  Add more of the cooking liquid from the other pot if desired.
  • Serve warm.

5 Important Foods For Weight Loss

When you think of losing weight, your first thought is probably about the foods you will have to eliminate from your diet.  But, how often do you think about the foods you need to add?  Probably not very often. While some diet and weight loss programs talk about eating less, others emphasize adding foods to your diet.  Not just any foods, however.  There are several foods considered to have some real benefits for anyone trying to lose weight. Here are a few foods that are right at the top of the list.

Oatmeal

Oatmeal and oat bran are loaded with fiber and when eaten can expand to almost 30 times their volume. The combination of these two effects decreases your appetite by making you feel fuller longer.  You can go for long periods of time without eating while keeping your energy levels high at the same time. In order to increase the effectiveness of your weight loss program, eat oatmeal about two hours before doing your workout. Steel-cut oats, rolled oats, and plain or natural oatmeal are your best options. Avoid the instant flavored oatmeal in packets as they contain lots of sugar and other additives, and they are much more processed, meaning the fiber content is decreased.

Raw Fruits and Vegetables

Your body burns, on average, 15% more calories when your meals contain mostly raw fruits and veggies than if you ate a meal with no fruits or vegetables.  It just makes sense, then, in order to lose weight you want to eat meals consisting of mostly raw ingredients. Since these ingredients still have all of their nutrients, your body gets what it needs while you feel satisfied.  Also, fruits and vegetables that are high in vitamin C, like lemons, oranges, and pineapple help your body to mobilize and flush out extra body fat.

Spices

For years, people have claimed that adding spices to your diet can help with weight loss. Recently, a professor at Oxford University, found that by eating just 3 grams of chili peppers in a meal can increase your fat-burning metabolism by 8% to 20%, for up to three hours after eating the peppers. Also, the addition of spicy mustard to your sandwich may burn an extra 45 to 75 calories over the same three hour time span. And, just by adding fresh ginger to your diet, you get a strong diuretic. Fresh ginger also increases growth hormone production, therefore increasing the amount of fat released from your body's fat stores for burning as fuel.

Apples

While eating raw fruits in general is typically considered a great way to lose weight, apples are especially important to single out. Apples contain pectin, which prevents your body from over-absorbing fat, as well as causing your body to release some of the stored fat. A study done in Brazil found that people who ate an apple before each meal lost 33% more weight than a group of people who didn't eat an apple. Pectin also acts as an appetite suppressant, so they are great snacks to tide you over between meals.

Fish

Not only are most fish loaded with tons of omega-3s, but fish like tuna, sardines, and salmon trigger the hormone leptin. Leptin is a fat-burning hormone that suppresses your appetite and determines whether you store the calories you eat as fat, or if you burn those calories for energy. The origin of the word is interesting, too.  Leptin originated from the Greek word “leptos” which means “slender.”  So, adding more leptin to your diet may just prove to be slenderizing for you.

Eating certain foods to lose weight is not a brand new theory.  We've often heard about diet fads that include one or two foods that dominate the program.  The idea of eating specific foods that have been scientifically studied is a much more recent development in the weight loss world.  When you look at the reasons why certain foods actually help you burn fat and calories, it just makes sense to add those foods to your diet plan.

Crockpot Recipe - Baked Apples

Here in Ohio, summer apples are just starting. While this may sound like a fall recipe, baked apples with a little yogurt actually make a nice, light summer breakfast. Just put them in the crockpot the evening before, and you'll have a tasty treat ready in the morning! Or of course you can have them for dessert....

Crockpot Baked Apples
(Serves 6-10)

Ingredients:

6 large baking apples (Rome or York work well)
2 TB lemon juice
2 TB butter, melted
3 TB brown sugar
1/2 tsp nutmeg
1 tsp cinnamon

Directions:
  • Peel, core, and cut apples in half. Place in crockpot.
  • Drizzle with lemon juice & butter.
  • Sprinkle sugar & spices over.
  • Cover and cook on "Low" 4  hours (or 2 hours on "High."
  • Serve hot, with vanilla ice cream, or cold, with yogurt for breakfast.
