Video - How to Make Mozzarella Cheese
As a funny note on the synchronicity of life, I happened upon this video by accident this afternoon, after just this morning talking with a friend about making mozzarella! (As we say at New Holistic Living - everything is connected....) I got a book on cheesemaking last summer, but honestly haven't done much with it so far. Making your own cheese can be challenging, and, for some kinds, requires equipment and space I just don't have right now. I make a lot of yogurt, which I use mostly in my morning breakfast smoothies, but otherwise the only things I've made from the book are a Greek soft cheese, which was just okay, and ricotta, which was amazing, and I've made that one a couple of times since then as well.
I hadn't thought to try mozzarella - I thought it sounded complicated when I had looked at the recipe previously, but my friend this morning mentioned it was supposed to be an easy cheese to make, and judging from this video, it's really pretty simple. I actually have all of the ingredients already, so I will try this one soon for sure. Summer is a great time to make mozzarella, with all the fresh tomatoes and basil soon coming on.... Yum! (If you need a few recipes for your fresh mozzarella, be sure to check back later this week for some tasty suggestions.)

Video - High Fiber Muffin Recipe
Here is a quick and fun recipe for some healthy and tasty high-fiber muffins. Muffins are a great way to get some extra fiber into your diet - they are quick and easy to make, and make an excellent snack or breakfast on the run. If you have a juicer, you'll have lots of leftover fiber - don't throw it away - that's a lot of the good stuff from your fruits and veggies! Instead, use it to make muffins like these. Wow, don't they look delicious?

Recipe - Low-Carb Burgers
I had a couple of different fun diabetic cooking videos I was considering sharing with you today, but the other one was stuffed peppers, which was a bit more involved, and since we just did the big long cabbage rolls recipe on Wednesday, I figured I'd give you a quick and easy one for the weekend! Burgers are a great way to get a fresh, from-scratch, and filling low-carb meal in minutes, so they're great for diabetics, or just busy folks wanting to cut back on carbs a bit. This one uses ground turkey, but as he shows, you can also use beef, beans, or my favorite - ground venison.

Recipe - Blueberry Mango Salsa (Video)
I am just a sucker for fruit salsa's - they are sooo fresh and summery! Blueberries make a great salsa, and while I've tried several different recipes, this one is pretty good, and I thought I'd share the video so you can watch it being made. This one includes mango - another special summer treat! It turns out so beautiful and colorful, it can't help but make you hungry.... Although I thought this recipe really skimped on the blueberries - I would suggest using 2 cups or so - maybe crush one cup, and leave the other whole. Feel free to improvise and come up with your own variations! (For example, substituting peaches for mangoes may be a great variation for those who don't like mangoes, or just want to try something different.)

To keep it healthier, I would definitely saute the shrimp in just a TB or so of oil, instead of frying them. Video - Organic Swiss Chard Quesadillas
Here is a great video which is also a fun one for you sustainable gardeners, as it shows you one possible yummy outcome from your garden! This shows the whole process, garden to table, so it's an entertaining as well as educational video. I think I'm going to try this one with some of the abundance of Swiss Chard I have in the fridge right now from my CSA.... I have really come to love Swiss Chard this winter - it's so sweet and tender, and as long as you cook the stems a little longer, you can use the whole thing (in this recipe, I would have sliced the stems up, and cooked them with the onion, and then they should have been nice and tender by the time it was all done - adding both nutrients and color).

Video - Rosemary Fish Recipe
Wow, this video made me SO hungry! I haven't tried it yet, as I just found this, but I will definitely be making this soon! I just love her Greek accent - makes me feel like I'm in some foreign land eating some amazing food.... But I can bring the foreign land to my own kitchen with this very simple recipe! The only thing is I couldn't exactly hear how much olive oil she said - it sounded like "a cup", but it doesn't look like nearly that much - I think I would try 1/4 cup and that would probably be enough.
