Muffins make a great breakfast-on-the go idea, as they are easy to make ahead of time, and usually will keep for a couple of days. Make them early in the week and get a couple of good breakfasts out of them. Round out the breakfast with a scrambled egg and some juice if you have time, or if you're really in the hurry just grab a muffin and a piece of fruit and go.

Thanks for your comment! You are correct that there are a lot of good ways to eat healthy. However, I would like to clarify that while "butter is not your friend," it is also not your enemy (a common misconception). Butter is one of the few fats that it is okay to cook with, as heating does not transform it into a harmful form (as is the case with many processed vegetable oils). Personally I prefer extra-virgin coconut oil, but butter is also okay in moderation (stick with organic, as chemicals consumed by the animal are concentrated in fat). Salsa is great, and while it is true that many (if not most) commercial salad dressings are not very healthy, this applies to both creamy and "reduced fat" (watch out for lots of other bad stuff in these!) dressings. Making your own dressing from scratch is very easy, and way more tasty as well! (I will try to post some good dressing recipes on here soon.)
ReplyDeleteSo what oils are the best for cooking? Here is a good quick list: walnut, olive, coconut, and avocado oils, as well as organic butter (in moderation). For high-temperature frying or sautéing, use small amounts of avocado oil or rice bran oil.
