Recipe: Chicken Fajita Casserole

This simple casserole makes a great potluck recipe. It's got plenty of summer veggies in it - feel free to make your own salsa if you have a ton of tomatoes right now! It's easy and delicious, and will be a hit at your next pot luck.

Chicken Fajita Casserole
(Makes 8-10 potluck servings.)

Ingredients:

2 tsp cooking oil
1 medium size onion, cut into thin strips
1 green bell pepper, cut into thin strips
1 pkg (10 oz) frozen chopped spinach, thawed, squeezed dry (or 12 oz fresh spinach, washed, dried, and chopped)
1 lb cooked chicken, shredded
2 garlic cloves, minced
1 tsp chili powder
1 1/2 cups good prepared salsa
4 small (6 inch size) corn tortillas, torn into 1 inch pieces
4 oz shredded Monterrey Jack cheese

Directions:
  • Preheat oven to 350 degrees; coat a baking dish with cooking spray.
  • Pour oil into large skillet over medium-high heat, then add onion and bell pepper, and cook just until crisp/tender, then stir in the spinach and cook until hot; remove mixture from skillet to a bowl  with a slotted spoon and set aside.
  • Add the chicken, garlic, and chili powder to the hot skillet and stir, cooking, just until the chicken is heated through and the garlic is fragrant.
  • Spread 1/2 CUP of the salsa evenly into the baking dish.
  • Begin the layers:
    Half the torn tortilla pieces
    Half the chicken mixture
    Half the veggie mixture
    Half the remaining salsa
    Half the cheese
  • Repeat the layers EXCEPT do not add the remaining cheese
  • Cover the baking dish with aluminum foil and bake in preheated oven at 350 degrees for 30 minutes.
  • Uncover, sprinkle with remaining cheese, then continue baking UNCOVERED for 5 to 7 minutes or just until the cheese is melted.
  • Remove and let stand for at least 10 minutes before serving.

Learn These Low Carb Diet Guidelines

One of the best ways to get on track to healthy eating is to eliminate some of the unhealthy foods from your diet, such as processed foods and simple carbohydrates. This month, we'll be sharing some facts about eating fewer carbs, as well as lots of delicious and healthy low-carb recipes. Today we're going to clear up some of the confusion about eating a low-carb diet.

The guidelines of any diet can be a confusing mess if you don’t have a clear understanding what the diet is all about.  Why are certain foods permitted and others are eliminated?  What are these 'good' foods actually doing for your body and your health?

Low carb diets focus on omitting the bad carbs (simple carbohydrates) from your diet, and replacing them with good carbs (complex carbohydrates.)  Since carbohydrates provide a source of energy for your body, it’s important to remember not to eliminate all carbs from your diet.  This is often a mistake among excited dieters when they don’t have all the facts. 

Another mistake sometimes made by overly enthusiastic low carb dieters is thinking you can meet all your body's needs by eating just protein.  Again, good carbs provide the fuel to burn for energy.  You need protein, but you also need to feed your body good carbs to stay nutritionally in balance.  Let's sort through some of the basic guidelines for eating a low carb diet.

It's easy to understand why foods that have added sugars such as soda, candy, cookies, and syrups are on the bad carbs list.  Sugar is sugar, right?  But then you'll find white bread, pasta, cereals, rice, and potatoes on the same bad carb list.  Why?  Because refined flour and starchy foods actually are sugar – or at least your body thinks they are and treats them like sugar.  Bad carbs (also known as simple carbs) give the body a quick energy boost, but drops off just as quickly.

Now, if you’re thinking “That’s everything I like to eat!” you are definitely not alone.  When you factor in your fast paced life, along with convenience foods, it’s no surprise we get into the habit of eating foods that aren't always healthy.  However, if you discipline yourself and start thinking about eating healthier as a life-altering process, or even a life-saving process, eliminating those bad carbs from your diet doesn't seem so hard to do.

Good Carbs

These foods are generally higher in fiber and sometimes in fat, too, but good fat.  Like bad carbs, good carbs give you an energy boost, but it's slower to come.  Unlike bad carbs, the energy boost lasts longer, preventing those dangerous spikes in blood sugar.  So, what's on the good carb list?

Depending on the particular low carb diet plan you are following, you'll be able to eat many foods you already enjoy.  You'll be eating a variety of vegetables, fruit and berries, along with nuts and some whole grains in order to get your good carbs.  These will include non-starchy vegetables such as celery, cucumbers, mushrooms, bell peppers, onion, broccoli, eggplant, tomatoes, jicama, all sorts of greens and some root crops, just to name a few.  Whereas bad/simple carbs have little or no nutritional value, these foods provide the nutrients your body needs to maintain good health and prevent illness and disease.

Healthy Proteins

Of course, a low carb diet also means a diet rich in protein and healthy fats.  This will include fish, poultry, meat, cheese, nuts, and eggs, along with vegetarian choices such as beans, legumes, and even broccoli and Brussels sprouts.  Not only are proteins important for your health, but the fat provided in some proteins is also necessary to help you feel full after eating.  This prevents over-eating and unhealthy snacking.

The portion of protein versus good carbs varies from diet to diet.  Again, you want to consult your health care professional to see how your particular health needs will be met.  Also, not every protein is desirable in your healthier diet.  You may want to avoid red meats, or cook leaner cuts, for instance.  Cooking your proteins properly is another consideration.  That lean cut of protein or seafood won't be healthy if you cook it in processed oils or cover it in sugary sauces or glazes.  Eggs are considered a perfect protein but if they're fried in butter, your low carb diet will be sacrificed.  Choose your protein, then choose your cooking method using good fats and you'll be on the right track.

Quick Tips

Starting a new diet may be difficult, but the hard part really comes when you are trying to stick to it.  In the beginning, you're all excited about the possibilities.  As time goes on, you may lose momentum, or interest, or both.  There are a few ways to help you stay on track through the ups and downs that come with any diet.  Let's tick off a few here:

Schedule your meal times and plan your menus in advance. This makes it easier to stick with a routine and not stray from your diet.  With this, you'll also be making out grocery lists for your menus.  Shopping with this list will help you avoid impulse buying. 

Ease yourself into healthier eating habits so you don't feel deprived.  Cutting out your favorite 'bad carbs' all at once can be stressful and leave you feeling hungry and sad.  Keeping some potatoes and pasta in the house isn't the worse thing you can do.  Just make them sweet potatoes and whole grain pasta to be on the healthier side.  Even having a few crackers or a cookie or two isn't the end of the world.  If this dieting 'safety net' is helpful, go ahead.  After a while, you won't want them around anymore.

If you're craving carbs, try eating good carbs before you eat the bad carbs.  Wait twenty minutes, eat more good carbs, wait, and continue.  If your craving continues, go ahead and indulge in your craving.  Don't beat yourself up just because you ate a snack that's not on your diet.  Enjoy it, then let it go.

Make a list of  'good carbs' and keep it with you at all times.  This is especially helpful when you don't get your menu plan written and find yourself in the grocery store, spinning around, uncertain of which direction to go – and hungry!  Without direction, your hungry tummy will lead you into the sweets, starch, or bakery aisle.  So, be prepared.

Keep in mind that if you’ve been eating a steady diet of bad carbs, so breaking this old habit won't be easy and there will be setbacks.  You don't have to make the change all at once.  Take baby steps if you need to at first.  Make small changes in your eating habits and lifestyle.  This can help you feel less deprived, which could save your diet in the long run.  A healthier, more energetic lifestyle will be well worth your effort.

Recipe: Home-Made Gluten-Free Chicken Nuggets

Eating out is nice, and there are more and more gluten-free restaurants popping up every day, but sometimes it's nice to be able to make one of your fast-food favorites at home. Obviously one should not eat chicken nuggets every day, but if you want a healthier, homemade version that you can indulge in from time to time, you can't go wrong with this from-scratch gluten-free version - the kids will love them, and with these, you don't have to wonder what's really in them!

Chicken Nugget Knockoff - Gluten Free

Ingredients:

Two chicken nuggets

3 large or 4 smaller chicken breasts, skin and bone removed
2 Tbsp white distilled vinegar
1 tsp garlic salt
1 cup milk
1 cup cornstarch
1/2 tsp paprika
salt and pepper to taste
peanut oil for frying

Directions:
  • Cut chicken into 1 inch chunks, keeping them as uniform in size as possible so they fry up evenly.
  • Put chicken pieces in a large glass bowl, add the vinegar and garlic salt and toss to coat evenly; cover with plastic food wrap and set aside for 15 minutes to marinate.
  • Get out a heavy Dutch oven and fill it with enough peanut oil to have at least 3 inches in the pot; set aside.
Prepare the coating:
  • Pour the milk into a shallow bowl. In another shallow bowl, mix together the cornstarch, paprika, salt, and pepper.
  • Just before ready to fry, prepare the chicken:
  • Dip chicken pieces first in milk, then in the cornstarch mixture and set on a rack, then continue until all pieces are coated.
  • Put the Dutch oven with the oil in it over medium-high heat and heat the oil to 350 degrees. (It's best to check with a thermometer.)
  • Carefully lower a few chicken nuggets at a time into the hot oil, making sure there is enough room to allow the nuggets to fry evenly - don't over crowd.
  • Fry for about 5 minutes or until nicely browned all over, then remove with a slotted spoon to a paper towel covered rack to drain. Sprinkle with salt if needed while the nuggets are still warm.
  • Continue frying the chicken nuggets until done, then serve warm with gluten-free dipping sauces as desired.  This is a good 'copy cat' recipe for chicken nuggets your kids would typically get out at a fast food place - only healthier, and without the "mystery" ingredients!

Easy Gluten Free Meal Ideas For Kids

If your child is diagnosed with celiac disease, you are bound to have mixed feelings. It's a relief to know what it is that has been making him or her so sick. And you know celiac disease is easy to manage with the proper diet, even healing the damage already done. But in the same breath you may be panicking about what on earth you're going to cook.

Keeping gluten-free foods in the house for adults is one thing. Keeping gluten-free foods for kids is something altogether different. Not only do you have to make sure your child doesn't accidentally eat something with gluten in it, but you have to make sure the poor child isn't going to starve! We all know kids will stare into a fully stocked refrigerator and exclaim; "There's nothing to eat!" Imagine if most of the food in there was truly off limits.

That's why you need to plan ahead. Creating gluten-free meals and snacks is not that difficult if you prepare yourself. Start by learning the basics about the foods that are naturally gluten-free. Once you practice and perfect your label reading abilities, you can branch out into packaged foods with more confidence.
Let's start by looking at a few simple ideas for meals and snacks that are not fancy, but that will certainly be a welcome sight on your child's plate.

Here's where you can go crazy with fruit, yogurt, and nuts. Forget trying to figure out if your multi-grain cereal has gluten in it. Dish up a bowl of unflavored yogurt with fresh berries and a big scoop of chopped almonds. There are also lactose-free dairy products available if your child is also lactose intolerant.
Scramble up some eggs and mix in cheese and veggies, then roll up into a corn tortilla for a breakfast burrito. Fried potatoes are another welcome change from a bowl of cereal. As a matter of fact, your child may not miss the cereal at all. Of course, Puffed Rice or Cream of Rice cereals can still be enjoyed. Again, be sure to double check the label.

Lunch or Snack

Simplicity is the name of the game here. You want some grab-and-go foods handy, but they still have to be filling. Stock up on lots and lots of nuts for snacking and for mixing into salads. Rice cakes or rice crackers with cheese, peanut butter, or hummus is a welcome snack on the go. Celery sticks dipped in hummus are another filling snack or light lunch.

Have a bag of corn chips on hand for quick nachos with melted cheese and fresh salsa. Again, label reading is a must when buying anything in a jar, can, or box. Slice up apples and spread with peanut butter. Or, better yet, put whole apples in the oven, stuff them with raisins, and bake until soft. And don't forget popcorn - which kids love! Avoid flavored popcorn;  instead choose regular plain popcorn and add your own gluten-free flavorings - you can even be creative and let your kids come up with their own gluten-free toppings.

Dinner

When you cook dinner for your kids, you probably already make many gluten-free dishes. The trick here is to avoid as many packaged items as possible to make things easier on you. Use fresh citrus like lemon, lime, or even oranges to flavor chicken breasts. If you like a crunchy topping just chop up nuts and coat the chicken. Bake on a rack in the oven and you have a delicious meal that is gluten-free and simple to make. Serve with a quinoa or brown rice side dish mixed with fresh chopped veggies.

Use corn tortillas and put together easy pizzas in a flash by adding your favorite meats, cheese, and vegetables, then baking until the tortilla is crisp and cheese is melted. Bake potatoes and load them up with lots of cheese and veggies. Toss together some good albacore tuna with salad greens, chopped red bell peppers, celery, peas, and lots of crunchy nuts, then sprinkle with olive oil and red vinegar for a light meal on a hot summer night. Dinner is the time to serve plenty of veggies, lean meats, poultry, and seafood. Once you learn a few flavoring tricks, there is no reason your child should go hungry or feel deprived.

The cupboards do not have to be bare in a gluten-free kitchen. Nor do you have to spend loads of money on specialty foods. Look for naturally gluten-free foods, learn to read labels, and be creative. You'll get the hang of this in no time, and enjoy delicious and healthy foods right along with your child!

Recipe: Bayou Country Chicken Pot Pie

Down-home cooking is the way to go if you're looking for comfort food! This recipe brings the flavors of the South to you wherever you may be cooking today, with classics like bell peppers, sausage, chicken, and tomatoes all baked under a dumpling-like crust (make your own crust from scratch for a more authentic flavor).

Bayou Country Chicken Pot Pie

Ingredients:

1 Tbsp olive oil
1 large onion, chopped
1 large green bell pepper, chopped
2 garlic cloves, minced
8 oz chicken thigh meat, chopped
1 (14 oz size) can stewed tomatoes
8 oz cooked smoked sausage, diced
dash or two of hot pepper sauce
2 1/4 cups buttermilk baking mix
3/4 tsp dried thyme
1/8 tsp black pepper
2/3 cup milk

Directions:
  1. Preheat oven to 450 degrees.
  2. Heat oil in 10 inch cast iron skillet over medium-high heat.
  3. When hot, add the onion and bell pepper and cook for 2 or 3 minutes or until veggies soften.
  4. Add the garlic, stir, then add chicken meat and cook, stirring until chicken is no longer pink, about 1 or 2 minutes.
  5. Pour in the tomatoes, add the sausage and hot pepper sauce, stir, reduce heat to low and cook for 5 minutes.
  6. While that cooks, get out a bowl and mix together the buttermilk baking mix, the dried thyme, black pepper, and the milk, stirring until just combined - don't over mix.
  7. Drop this buttermilk batter by big tablespoons in piles over the chicken mixture in the skillet.
  8. Bake in preheated oven (in the skillet) until biscuit top is golden brown and the chicken mixture is bubbling hot, about 15 to 18 minutes.
  9. Remove and let stand at room temperature for 5 minutes before cutting to serve.

Recipe: Crockpot Jambalaya

Use your slow cooker to make this classic Cajun recipe even easier! Just brown the meat, then add everything to the crockpot, cover, and let cook until done - voila - dinner!

1 large onion, diced small
1 large green bell pepper, diced small
2 celery stalks, diced small
2 Tbsp cooking oil
1 lb chicken meat, diced
1 lb pork sausage
3 garlic cloves, minced
1 reg can tomato paste
1 reg can stewed whole tomatoes
1 reg can tomato sauce
1-1/2 cup water
1-1/2 cups uncooked rice
1 lb small to medium shrimp
1 box (10 oz) frozen corn, thawed
2 Tbsp brown sugar
1/4 tsp cayenne pepper
salt and black pepper to taste
2 Tbsp butter

Directions:
  • Put chicken & sausage in a large skillet, add oil, and cook over medium-low heat until chicken is cooked and sausage is no longer pink.
  • Add the garlic and cook, stirring until garlic is just fragrant.
  • Add chicken, sausage, onion, pepper, celery, tomatoes, paste, sauce, and uncooked rice to large crockpot. Add 1 1/2 cups of water to the pot, stir thoroughly.
  • Cover and cook for 6 hours on Low or until rice is tender.
  • Add in the shrimp, corn, brown sugar, cayenne, salt, black pepper, and the butter, stir to combine and cook until shrimp is pink and cooked thoroughly; about 20 minutes more.
  • Serve hot in bowls with crusty bread and a green salad.

Recipe: Island Time Grilled Chicken

Just pop it on the grill and then stretch out by the pool - and maybe have your honey rub a little coconut oil on you - and in no time you'll be ready for a relaxed dinner featuring the spicy sweetness of island cuisine.

Ingredients:

1/4 cup lime juice
1/2 cup pineapple juice
3 tbsp chopped hot peppers
2 tsp minced garlic
1/4 cup chopped onions
chicken pieces, about 2 lbs.

Directions:
  • Place all ingredients in a large ziploc bag.
  • Add chicken pieces to bag, seal, and put in refrigerator overnight.
  • When ready to cook, preheat grill to medium.
  • Take chicken out of marinade and place, skin side down, on grill grates on indirect heat; close grill.  
  • When the skin crisps, turn and grill until meat is cooked through; about 15 to 25 minutes depending on the cuts of chicken.

Recipe: Cheesy Grilled Chicken Cutlet Veggie Wraps

This fast and tasty grilled meal makes a great quick weeknight dinner, or a nice lunch for a lazy weekend afternoon. Simple and easy, just a few fresh ingredients make this a snap to prepare, and grilling in packets makes the cleanup just as easy - and it's low-carb too!

Cheesy Grilled Chicken Cutlet Veggie Wraps

(Serves 4.)

Ingredients:

4 chicken cutlets, pounded thin
1/2 cup Italian Dressing
4 slices Provolone cheese
1 lb fresh cleaned asparagus
1 red bell pepper, cleaned and sliced into thin strips

Directions:
  • Prepare grill to medium-high heat.
  • Put cutlets into a bowl with Italian dressing and toss to coat well.
  • Tear off 4 big sheets of aluminum foil and lay on work surface.
  • Lay out a cutlet on each foil sheet; top with cheese slices, then divide asparagus and the red bell pepper pieces evenly between the packets.
  • Roll the cutlets up like a burrito over the vegetables, then roll up in the foil and seal tightly.
  • Put the foil bundles on the grill over indirect heat, close grill, and cook for 20 to 30 minutes, turning over 2 to 3 times during the cooking time.
  • Remove and let stand for several minutes, then unroll the foil and serve.

Recipe: Grilled Chicken Fajita Dinner In A Pouch

This easy-peasy yummy dinner takes little prep time, so you can spend your time enjoying the great outdoors on a summer evening, instead of cooking away in the kitchen. Grilling food in foil packets makes it easy to cook a full meal at once, and clean up of course is a snap - you won't even get the grill dirty! Enjoy this tasty summer dinner for a picnic with friends, or just a lazy summer evening at home in the backyard.

Grilled Chicken Fajita Dinner In A Pouch
(Serves 4.)

4 teaspoons Mexican seasoning powder or chili powder
4 tablespoons lime juice
1 1/2 lbs chicken, cubed into 1/2 inch pieces
2 bell peppers, diced small
2 onions, diced small
tortillas for serving (optional)

Directions:
  • Mix Mexican seasoning and lime juice together in a bowl, then add the chicken and bell peppers, and cover with plastic wrap. Put in refrigerator for up to 2 hours.
  • Make 4 pouches out of aluminum foil and spoon mixture (including the liquid) into the center of each pouch, dividing ingredients equally.
  • Fold edges of pouches tightly and form envelopes, leaving a bit of room for hot air and expansion within the pouch.
  • Put on grill set at medium-high and cook for 10 to 15 minutes, turning the pouches several times to cook evenly.
  • Serve on tortillas with toppings such as sour cream or guacamole, if desired.  This meal may also be served over a salad.

Recipe: Grilled Chicken Salsa Verde Burritos

From Asian to Mexican, grilling can bring many exotic flavors right to your own backyard. Today's recipe features spicy salsa verde and creamy avocado for a tasty and easy meal great for a quick lunch or dinner in a shady spot on a hot summer day!

Grilled Chicken Salsa Verde Burritos (Serves 4.)

Ingredients:

4 chicken breasts, skin and bones removed
olive oil for grilling
salt and pepper
1 cup salsa verde
8 small tortillas (corn or flour)
1 avocado, sliced thin
2 cups shredded Pepper Jack cheese

Directions:
  • Set your grill up for medium-high heat.
  • Rub the chicken with a little olive oil and season with salt and pepper. Place chicken on grill, close cover, and cook for 5 minutes, flip and cook for 5 more minutes.
  • Remove from grill and let rest on a cutting board for 3 minutes; then slice chicken into thin strips and place in large bowl.
  • Add salsa verde to bowl with chicken and stir gently to combine; set aside
  • Place tortillas on the grill just until grill marks appear, flip and do the same to the other side. Remove to working surface.
  • Lay out tortillas and divide the chicken slices, avocado, and cheese evenly between all the tortillas and roll up into a burrito.
  • Makes 8 small burritos.

Low Carb Recipe: Chicken Cheese Quesadillas

Here is another great example of how a classic, easy and tasty food can fit into your low carb diet - you won't feel like you're on a diet when you make simple and delicious recipes like this part of your regular meal plan! This will serve 4 as a full meal, or cut in half will serve 8  as a light snack or lunch. Feel free to add any other veggies you'd like, just making sure you cut them very small so they heat during the short cooking time. Fresh diced tomatoes are a great addition, and other tasty suggestions include green peppers, olives, or avocado - or come up with your own!

Easy Chicken Cheese Quesadillas
(Serves 4-8.)

Ingredients: 

1 cup shredded Monterey Jack cheese, or Pepper Jack if you like the heat
8 small low-carb tortillas
8 oz cooked free-range chicken, shredded
2 roasted red bell peppers, chopped
2 Tbsp fresh cilantro or parsley, chopped

Directions:
  • Lay 4 tortillas out on work surface.
  • Evenly divide the cheese and sprinkle 1/2 of each portion over the tortillas.
  • Spread even amounts of the chicken, peppers (and/or other vegetables), and cilantro over the cheese, then top with the remaining cheese. 
  • Set the remaining 4 tortillas over the filled tortillas, press gently to close.
  • Spray a non-stick skillet with a little cooking oil.
  • Put over medium heat, then set each quesadilla in skillet, cooking 2 minutes, or until browned slightly, then flip and cook another 2 minutes.
  • Remove from skillet and continue with each quesadilla until finished.
  • Cut each in half or in wedges and serve warm. May serve with a dollop of sour cream and stay within your low carb diet.

Video - How to Make Broth From Scratch

This short video gives a quick demonstration of making home-made chicken stock. You can easily substitute turkey, beef, or other bones in this recipe for other types of stock. And remember that you can easily make stock from bones from a leftover chicken, turkey, or even duck carcass - you don't need to use the meat. A large percentage of the flavor is going to come from the bones anyway, and this is a great way to get the most out of your leftover bones once you've taken all the meat off of them. That way your food can do double-duty for you! As always, use organic and free-range meats when making your stock, to ensure that you're making the best broth with the most health benefits.

Recipe - Caribbean Chicken Cantaloupe Bowls

For a taste of the tropics, try this special summery recipe full of exotic flavors and healthy goodness. Chicken meets the juicy sweetness of pineapple and cantaloupe, which are given a unique kick with coconut and curry flavors, all served together in beautiful cantaloupe bowls - this is one recipe sure to impress at a dinner party!

Caribbean Chicken Cantaloupe Bowls
(Serves 4.)

Ingredients:

2 cups cooked chicken, cut in bite size pieces
1 can (20 oz) pineapple chunks, drained, juice reserved
1/2 cup green onions, chopped
1/3 cup diced celery
1/3 cup unsalted peanuts
1/3 cup raisins
1/4 cup shredded coconut
reserved pineapple juice
3 Tbsp mayonnaise
2 to 3 tsp curry powder
1/4 tsp powdered ginger
2 medium cantaloupes

Directions: 
  1. In a large bowl, toss together the chicken, pineapple, onions, celery, peanuts, raisins and coconut and set aside.
  2. In separate bowl, whisk together the pineapple juice, mayonnaise, curry, and ginger. 
  3. Pour this dressing over the chicken salad mixture and toss together until coated well, then cover and refrigerate for at least 1 hour before preparing finished salad.
  4. When ready to serve, wash and cut both cantaloupes in half on the equator, then scoop out the seeds and pulp and discard, then scoop out the edible flesh with a melon baller making sure you get fairly close to the rind, but leave enough support to form a bowl.
  5. Put the melon balls in with the chicken salad and toss well, then spoon into the cantaloupe bowls and serve immediately.

Recipe - Indian Curry Chicken

Diets can sometimes seem tedious. This dish is packed with powerful flavors to keep it interesting and to satisfy your hunger. The coconut milk does contain fat, but for many diets this fat is considered "good" fat.  You may substitute other milk if that is more suited to your diet instructions. In general this recipe should work well for "O" or "B" types if following the blood type diet.


Indian Curry Chicken
(Serves 4.)

Ingredients:

1 Tbsp cooking oil
1 small sweet onion, diced
1 garlic clove, crushed or grated
1 Tbsp curry powder
1 tsp ground ginger
1 large head cauliflower, cut into small florets
1 can (13.5 oz size) unsweetened coconut milk
1/2 cup water or broth
1 1/2 lbs. cooked chicken, diced
Salt and pepper to taste

Instructions:
  1. In a large heavy skillet over medium-low heat, put the oil and and diced onion, stirring until onion is translucent.
  2. Stir in the garlic, curry powder, and ginger, and continue cooking just until the garlic gets fragrant.
  3. Add the cauliflower, coconut milk, and water or broth, turn heat down to low, loosely cover the skillet, and simmer until cauliflower is fork-tender.
  4. Add the chicken to the skillet, stir, taste for salt and pepper and adjust seasonings to your liking.
  5. Simmer, uncovered, for another 5 to 10 minutes or until chicken is hot and the liquid has thickened a little and reduces slightly.
  6. Serve hot over rice, if that suits your diet. Otherwise, serve as is in bowls like a thick stew. (Type O might want to omit or limit the rice.)

Recipe - Healthy Asian Chicken Salad

Here is a delicious and healthy chicken salad recipe, full of protein, fiber, and antioxidant-rich veggies. The tangy Asian-style dressing is a healthy change from the typical creamy dressings, and will delight your taste buds with lemon, honey, and a touch of peanut butter. Makes a great lunch or light supper.

(Serves 2 as a main dish, or 4 as a side.)

Ingredients:
2 cups cooked chicken, shredded
3 tomatoes, chopped
1 can (14oz) black beans, rinsed and drained
1 can (14oz) corn, rinsed and drained
½ cup cucumber, diced
1 head Romaine lettuce, washed and chopped

Dressing:
3 tbsp peanut butter (creamy)
¼ cup fresh parsley
1/3 extra-virgin olive oil
Juice of 1 lemon
1 tbsp honey
2 garlic cloves, finely minced
Salt and pepper

Instructions:
Place chicken, tomatoes, black beans, corn, cucumber and chopped lettuce into a large salad bowl and combine.

Add all dressing ingredients in a food processor and blend until smooth. Pour over the chicken salad mixture, and toss. Serve with warm pita bread if desired.

Recipe - Bacon-Wrapped Mustard Chicken Strips

Choose organic meats if at all possible, and prepare the sauce ahead of time to reduce last-minute prep time even further.

Bacon-Wrapped Mustard Chicken Strips

Ingredients: 

4 chicken tenders, each cut in half lengthwise
8 strips of bacon, uncooked, use turkey if you wish
1/4 cup spicy brown mustard
1/4 cup olive oil mayonnaise
1/4 tsp chili powder

Directions:
  • In a bowl, whisk together the mustard, mayonnaise, and chili powder.
  • Take 1/4 cup of sauce out and put in a separate bowl, cover, and put in refrigerator. This is your dipping sauce.
  • Lay chicken strips out on a glass plate or shallow dish and spread the remaining mustard sauce over them, making sure to completely coat each strip; set aside and let marinate for 15 minutes.
  • When ready to prepare, preheat broiler, with rack about 6 inches away from heat source.
  • Take one chicken strip out of marinade, take one piece of bacon, and wrap it around the chicken starting at the top and working your way down to the bottom; lay it on the broiler pan. Repeat with each marinated chicken strip, laying each one on broiler pan, arranging them evenly. Discard any marinade remaining in the pan you had the chicken in. (Note: When you lay them on the broiler pan, try to have the loose bacon ends facing down.)
  • Put bacon wrapped chicken under the broiler for about 4 to 5 minutes, then turn and broil for another 4 to 5 minutes. The bacon should get crispy and the chicken should be cooked through.
  • Remove to paper towel covered cooling rack.
  • Serve with the dipping sauce you saved in the beginning.
This is a good snack for a protein rich - low carb diet, but be sure to check your mustard and mayonnaise labels. You may use turkey bacon for less fat.
