South Of The Border Black Bean Spinach Salad
(Serves 2-4.)
Ingredients:
2 Tbsp fresh lime juice
1 tsp cumin
1/4 tsp kosher salt
1/4 tsp black pepper
2 cans (15 oz) black beans, drained and rinsed
2 cups diced fresh tomatoes
1/4 cup shredded cheese
1/4 cup diced onion
2 Tbsp chopped fresh cilantro
4 cups chopped spinach
Directions:
- Put the lime juice, cumin, salt and black pepper in a salad bowl; whisk to combine.
- Put the beans, tomatoes, cheese, onion, and cilantro in the salad bowl and toss to coat with the dressing.
- Divide the spinach between salad plates and spoon the black bean mixture over the top of each.
- Serve immediately.
