Recipe: Pecan Praline Macaroons

For dessert, or a special treat, try these Louisiana-inspired treats! New Orleans is famous for it's pecan pralines, and this easy and scrumptious recipe shows you why. This one is a twist on the classic praline, and it's so simple you'll want to make it again and again.

Pecan Praline Macaroons
(Makes about 24 macaroons.)

Ingredients:

3 large egg whites, room temperature
1 cup dark brown sugar, packed
1 cup pecans, chopped

Directions:
  1. Preheat oven to 275 degrees. Line a cookie sheet with parchment paper.
  2. In a cold mixing bowl, put the egg whites and beat with a mixer until they form peaks. Then, with mixer running, slowly add in the brown sugar, beating until you get stiff peaks.
  3. Carefully fold in the pecans using a rubber spatula.
  4. On a cookie sheet, drop heaping teaspoons of mixture allowing for room to spread.
  5. Bake in preheated over for 30.  Keep your eye on them.  You want the macaroons to be hard and still shiny.
  6. Remove and allow to cool at room temperature on a cooling rack.

Recipe: Bourbon Black Strap Pecan Pie

Nothing says Louisiana like a good old-fashioned pecan pie, but the distinctive flavors of bourbon and black strap molasses in this version will make it a treat your taste-buds are not likely to forget! Like most pecan pie recipes, this one is pretty simple to prepare - just remember to make it ahead of time, as it will need to have time to cool and set before it's ready to eat.

Bourbon Black Strap Pecan Pie

Ingredients:

3/4 cup black strap molasses
3/4 cup brown sugar
1/2 cup light corn syrup
4 Tbsp unsalted butter
1/4 tsp salt
3 eggs, beaten
1 tsp vanilla extract
1/4 cup bourbon
1 1/2 cups pecan halves
1 unbaked 9 inch pie crust

Directions: 
  1. Place oven rack in the middle position of oven. Preheat oven to 350 degrees.
  2. Flour a work surface, lay pie crust out, and roll until smoothed out, then gently place in 9 inch pie pan, crimp edges and set aside.
  3. In a saucepan, put the molasses, brown sugar, corn syrup, butter, and salt. Set on stove burner on medium heat. Stir mixture until butter is melted and sugar is dissolved.
  4. Turn heat up and bring mixture to a gentle boil; let boil undisturbed for 1 minute.
  5. Remove immediately from heat and pour into a bowl; set aside to cool to room temperature.
  6. When the molasses/sugar mixture is cooled, add the beaten eggs, vanilla, and bourbon, whisking to combine.
  7. Add the pecans and fold in with a spatula or large spoon.
  8. Pour the mixture into the pie crust.
  9. Bake in preheated oven until the filling is set, about 55 to 60 minutes.
  10. The pie is done when the crust is golden brown, the filling is dark in color, the edges are solid, and the center doesn't jiggle a lot when you give the pie pan a wiggle.
  11. Remove and cool completely at room temperature before serving.

Recipe: Sweet Potato Pecan Crusted Beignets

Nothing says New Orleans like beignets! In this recipe, these classically rich fried pastries are given a special twist with the addition of sweet potatoes and pecans. Pack some of these in your satchel and head out to the parades for a day full of tasty fun!

Sweet Potato Pecan Crusted Beignets

Ingredients:

2 medium sweet potatoes, baked
1 egg yolk, lightly beaten
1/4 cup dark brown sugar, packed tight
1/2 cup all-purpose flour
1/8 tsp allspice
1/8 tsp cinnamon
1/8 tsp cloves
1/4 tsp nutmeg
2 egg whites
Oil for frying
1 cup finely ground pecans, put in shallow bowl
1/2 cup granulated sugar

Directions:
  • Bake the sweet potatoes in 350-degree oven for about 1 hour, or until soft. Cool, then cut in half and scoop insides out into a large bowl and mash with a potato masher until well blended and as smooth as you can get them.
  • Add the egg yolk, brown Sugar, flour, allspice, cinnamon, cloves, and nutmeg; use a hand beater or masher and mix until well combined.
  • In a separate bowl, beat the egg whites until stiff peaks form; fold the egg whites into the sweet potato mixture in bowl. Be gentle when you fold in the egg whites so you don't deflate them.
  • In a large deep heavy skillet or saucepan, heat about 2 inches of frying oil until hot, but don't allow to get hot enough to smoke. Use a high heat oil, such as peanut oil.
  • Form the beignets by dropping a spoonful of sweet potato batter into the pecans in the shallow bowl, rolling it around until it's coated with the pecans.
  • Carefully drop the balls into the hot oil and fry until golden brown, turning once; about 4 to 5 minutes total time.
  • Be sure not to overcrowd the saucepan or the oil will cool and the beignets will get soggy.
  • Remove each beignet as it browns and put it on a paper towel covered cooling rack; sprinkle with sugar.
  • Keep warm if you wish on a baking sheet in an oven set on low.

Recipe: Nutty Roasted Brussels Sprouts

This simple recipe makes a perfect holiday side dish. The nutty, earthy flavors of Brussels sprouts and pecans are kicked up a notch with the addition of garlic and olive oil, and roasting brings out the rich sweetness in the sprouts. It's a snap to make, and adds a nice bit of healthy green to your holiday plate!

Nutty Roasted Brussels Sprouts
(Serves 4-6.)

Ingredients:

2 lbs fresh Brussels sprouts, trimmed and halved
1 cup pecans, rough chopped
2 Tbsp olive oil
2 garlic cloves, minced or grated
1/2 tsp Kosher salt
1/4 tsp black pepper

Directions:
  1. Preheat oven to 400 degrees.
  2. Put all the ingredients in a large bowl and toss well to combine and coat well with the oil.
  3. Arrange evenly on a large baking sheet.
  4. Put in preheated oven and bake until Brussels sprouts are fork tender and slightly browned, about 20 to 30 minutes, turning the Brussels sprouts with a spatula at least once during the baking time. 
  5. Remove and serve hot.

Recipe: Cinnamon Nut Breakfast Quinoa

To start including quinoa in your diet, why not start off with quinoa to begin your day? This tasty and high-protein grain will give you a great boost of lasting energy to get through your morning and do the things you need to get done. When combined with healthy raw whole milk, fruit, and nuts, this is a healthy and delicious way to start the day off right!

Cinnamon Nut Breakfast Quinoa
(4 Servings)

Ingredients:
1 cup organic whole milk (preferably raw)
1 cup water
1/2 tsp cinnamon
1/3 cup chopped pecans, lightly roasted
4 tsp agave nectar, raw honey, or maple syrup
1 cup red quinoa, well-rinsed
2 cups fresh blackberries

Directions:
  • In a medium saucepan, combine quinoa, water, and milk and bring to a boil over high heat.
  • Reduce heat, cover, and simmer over medium heat for fifteen minutes, until most of the liquid is absorbed. 
  • While the quinoa is cooking, roast the pecans in a dry skillet for three minutes on medium heat or in a toaster oven at 350 degrees F for about five or six minutes.
  • Remove quinoa from heat and let stand covered for five minutes. 
  • Stir in cinnamon and blackberries, then transfer to four bowls and top with roasted pecans. Drizzle one teaspoon of agave nectar, honey, or maple syrup over each serving.

Summer Recipe: Grilled Peaches with Pecans

Create a surprise treat on the grill this summer with this amazing summer dessert. This takes fruit to a whole new level! Sweet ripe peaches enhanced with brown sugar, over ice cream and topped with pecans - you really can't get much better than that....  Plus it's a really fast and easy dessert if you've already got the grill fired up. Impress folks at your next barbecue with this innovative yet easy recipe. For an adult twist, try adding a splash of brandy instead of the vanilla.

Grilled Peaches with Pecans
(Serves 4.)

Ingredients:

4 peaches (ripe, but not mushy), cut in half and pit removed
1 tsp vanilla extract
5 tbsp soft brown sugar (you can use less if the peaches are very sweet)
Large handful of chopped pecans
Frozen low-fat vanilla yogurt - enough for 4 servings

Instructions:
  1. Place the peaches into a bowl and add the sugar and drizzle with the vanilla extract. Toss to coat lightly. Set aside and allow to soak up the flavors for about 15-20 minutes.
  2. Meanwhile, preheat a grill to medium-high and grill the peach halves for about 5 - 8 minutes, then turn over and grill for a further 2 - 3 minutes. There should be grill marks on the peaches. 
  3. Divide into 4 dishes and serve immediately with frozen yogurt and a sprinkle of chopped pecans.
