Recipe: Sweet Creamy Broccoli Bacon Salad

This tasty recipe combines the nutritional benefits of raw broccoli with sweet raisins and nutty sunflower seeds for extra nutrients and energy. Add crispy bacon, and tangy apple cider vinegar and you have a flavor combination that will tantalize your tastebuds too!

Sweet Creamy Broccoli Bacon Salad

Ingredients:

2 lbs. fresh broccoli, cut into small florets
8 slices bacon, diced, fried crisp, and drained
1 small sweet onion, chopped fine
1 cup golden raisins
1 cup sunflower seeds
1 cup mayonnaise
1/4 cup white sugar
2 Tbsp apple cider vinegar

Directions:
  • Toss together in a large bowl the first 5 ingredients.
  • In separate bowl, whisk together the mayonnaise, sugar, and vinegar.
  • Add dressing to salad and toss gently to combine.
  • Taste for salt, and adjust seasoning.
  • Cover lightly with plastic wrap and chill for at least several hours to let flavors combine (best if chilled overnight).

Picnic Recipe - Easy Creamy Horseradish Coleslaw

This tasty slaw puts a modern flavor twist on an old picnic favorite! Horseradish and lemon juice add a special tangy to the creamy dressing, and it's easy to modify it to your tastes. Substitute honey or stevia for the sugar if desired.

Easy Creamy Horseradish Coleslaw
(Serves 8-12.)

Ingredients:

Popeyes Chicken & Biscuits coleslaw

10 cups shredded cabbage (mix green and red if desired)
1 cup finely shredded carrots
1/2 cup chopped green onions, including tops
1 cup mayonnaise
1 tsp sugar (if desired)
1 Tbsp prepared horseradish
1 Tbsp fresh lemon juice
1/2 tsp salt
1/2 tsp black pepper

Directions:
  • In a large salad bowl, combine the cabbage, carrots, and green onions.
  • In a separate small bowl, whisk together the mayonnaise, sugar, horseradish, and lemon juice.  Adjust seasonings to taste, then pour over coleslaw mixture and toss to combine.
  • Chill and serve cold.

Making your own mayonnaise may sound like a challenge, but it's actually easier than you would think. With the right tools, and surprisingly simple ingredients, here is one you may want to try. But watch out, you may become addicted!  I grew up eating homemade mayo, and all of the commercial mayo's I have tried as an adjult just don't measure up (with the exception of Trader Joe's brand). Creamy, tangy, and delicious, this recipe is worth a try!
