Recipe: Grilled Eggplant with Fresh Herbs

This is a great recipe for the grill. Meaty eggplant is an excellent vegetable for grilling - just make sure not to let it burn or get too smoky or it can taste bitter. Fresh herbs are best with this recipe, but if you don’t have any on hand, you can certainly use their dried counterparts. Just use a pinch of each herb if you’re using dried.

Grilled Eggplant with Fresh Herbs

Ingredients:

1 eggplant
3 tablespoons olive oil
1 tablespoon balsamic vinegar
2 cloves minced garlic
¼ cup fresh basil, finely chopped
¼ cup fresh thyme, finely chopped
¼ cup fresh dill, finely chopped
¼ cup fresh oregano, finely chopped
Salt and pepper

Directions:
  • Cut the eggplant into slices and salt them lightly. Let them sit for about 15 minutes, so the salt can bring out the moisture of the pieces. Wipe them dry with a bit of paper towel.
  • Meanwhile, combine the oil, vinegar, garlic herbs, salt and pepper. Let site to absorb the flavors for about 15 minutes. 
  • Brush eggplant with oil and herb mixture all over, ensuring that the herbs get distributed well. 
  • Place on a lightly greased grill and grill for about 15-20 minutes, flipping half way through.
  • Serve hot, lightly sprinkled with salt and pepper. Great as a side dish with grilled meats or other barbecue fixings.

Recipe: Warm Asparagus Spears with Pine Nuts

Nothing says spring like asparagus! Fresh from the garden, it's a true spring treat that is unlike anything else. Cooking it, however, can be tricky. The best way to do it is to keep it simple and let the unique flavor of the vegetable shine through.

Tender, but not overcooked asparagus is often a fine art. In these recipe, we steam the asparagus lightly before sautéing it with red wine vinegar. The final touch is chopped pine nuts sprinkled on top. Just a little goes a long way. This makes a great vegetarian side dish. If you're an Ovo-Lacto vegetarian, you can also vary the dish by adding a sprinkle of Parmesan cheese at the end.

Warm Asparagus Spears with Pine Nuts

Ingredients:

1 bunch of asparagus
1 tablespoon olive oil
1/2 tablespoon red wine vinegar
Salt and pepper
Chopped pine nuts

Directions:
  • Cut or snap off the tougher ends of the asparagus stems and steam the spears for about 3 minutes.
  • After the asparagus has steamed, heat the olive oil in a skillet over medium heat. Add the red wine vinegar and asparagus and sauté for about 2 minutes. 
  • When the asparagus starts to brown slightly it’s ready. 
  • Season it with salt and pepper and topped with chopped pine nuts.

Recipe: Cheesy Eggplant Lasagna

This simple and tasty low-carb recipe uses eggplant as the "noodles" in this fun take on lasagna. Use medium-sized long or oval eggplants if you can, so you can get the slices to approximate lasagna noodles in size. This is another great way to use up all those fresh tomatoes, basil, and eggplants your garden may be full of this time of year! Packed with healthy goodness, this one is also a good recipe for those on a low-carb or gluten-free diet.

Cheesy Eggplant Lasagna

Ingredients:

2 medium eggplants, sliced in thin lengthwise strips
1 cup tomato sauce
1 pound tomatoes, sliced thin
1 cup ricotta cheese, softened
3/4 cup shredded mozzarella cheese
2 tsp dry basil or 1/4 cup fresh chopped basil
2 tsp Italian seasoning  
salt and fresh black pepper, to taste
cooking oil spray

Directions:
  1. Preheat oven to 400 degrees F.
  2. Season eggplant slices with salt and pepper. Arrange slices evenly in a nonstick baking pan and bake for fifteen minutes.
  3. Spray a glass baking dish with cooking spray and arrange eggplant slices evenly on the bottom. Pour half of the tomato sauce over the eggplant, then top with a few tomato slices. 
  4. Sprinkle salt, pepper, basil, and Italian seasoning over this mixture, then spread a little of the ricotta cheese over the tomatoes. Sprinkle some mozzarella on top. 
  5. Repeat in layers, topping with mozzarella as a final step.
  6. Bake for twenty minutes, then place under a broiler just until cheese turns golden brown.
  7. Slice lasagna evenly and garnish with Italian seasoning.

Recipe - Vegan Cornbread

If you're looking for vegan recipe ideas, here's a delicious idea for cornbread. This goes great with the Vegan Cream of Broccoli Soup recipe from Wednesday, or try it with vegetarian chili for a tasty bowl of comfort food!

Vegan Cornbread

Ingredients:

1 ½ cups soy milk (unsweetened)
1 cup unbleached all-purpose pastry flour
1 ½ tbsp white wine vinegar
1 cup cornmeal
2 tbsp honey
3/4 tsp salt
1 tsp baking powder
½ tsp baking soda
2 tbsp vegetable oil

Instructions:
  • Preheat oven to 425°Fahrenheit and lightly grease a 9" square baking dish.
  • In a small bowl, combine vinegar and soy milk and allow to sit for a few minutes. 
  • Meanwhile, sift flour into a medium-size mixing bowl and add the rest of the dry ingredients. Add the soy milk/vinegar mixture and the oil and combine until just blended.
  • Spoon the dough into the baking dish and bake in the oven for about 30 minutes or until cooked through. 
  • Serve with soup or chili!

Recipe - Vegan Cream of Broccoli Soup

If you're trying to maintain a vegan diet or avoid animal products, this soup offers lots of healthy veggies, along with the rich creamy taste you're craving. If you're like me and don't like the taste of soymilk, or are allergic to or avoiding soy products, you can also substitute coconut milk for a tropical creamy flavor.

Vegan Cream of Broccoli Soup
(Serves about 5 - 7)

Ingredients:

1 lb broccoli, cut into florets, stalk cut into chunks
1 onion, chopped
1 garlic clove, crushed
2 cups vegetable stock
2 ½ cups soy milk (or coconut milk)
1 tbsp soy sauce
¼ cup all-purpose flour
Salt and pepper to taste
Fresh basil leaves, torn
Handful of almond slivers, toasted

Instructions:
  • In a large saucepan, combine the broccoli, onion, garlic and stock and bring to a boil. Reduce heat and simmer for about 15 minutes or until the broccoli is tender. Season well. 
  • Place soup into a food processor and add the flour. Blend until smooth then return to the saucepan. 
  • Stir in the soy milk and soy sauce and heat gently until the soup thickens. Adjust seasoning.
  •  Sprinkle with basil leaves and toasted almond slivers and serve immediately with fresh cornbread. (See Friday's post for this recipe!)

Meatless Monday Recipe - Summer Dish

I have had this dish at least once every summer since I was a kid. It really is a one-pot meal, incorporating the bounty of summer veggies all together in one delicious pot. It is hard to classify, as it's not exactly a stew, but neither is it a casserole. My mom's recipe card (which I copied for my own prolific recipe collection a few years ago) simply calls it "Summer Dish," which I suppose is as good a description as any.

This makes a huge pot, but luckily it is great reheated. Divide it into individual portion-sized containers for a grab & go lunch option. Even the kids may like this one, as you can disguise a lot of vegetables in here. You can cook the brown rice a day ahead to make it faster, but it really doesn't take long - the rice will probably take longer than the rest of it.

Summer Dish:
  • Saute 1 chopped onion and one (or more) anaheim or other hot pepper in 1 TB olive oil + 1 TB butter.
  • Add 1 medium-sized peeled and diced eggplant, and continue saute.
In a separate large pot or dutch oven, bring to a simmer:
  • 6-8 large fresh tomatoes, chopped
  • 6-8 patty pan squash, yellow summer squash, zucchini, or a combination, diced
  • 3 cloves minced garlic
  • Add saute to simmering tomatoes & squash when browned. Continue to simmer until vegetables are tender. 
  • Add 1 TB chopped fresh parsley and 1 TB chopped fresh cilantro or basil. 
  • Add 4-6 cups cooked brown rice. Mix well.
  • Top with 1 cup shredded cheddar cheese.
As usual, feel free to improvise, substitute, and make it your own! Try different herbs, different cheeses, maybe noodles instead of rice?  It is also okay to use canned tomatoes instead of fresh if you don't have them. I use about 2 14-oz cans (or 1 28-oz) of diced tomatoes if using canned.
