Recipe: Hawaiian Sunset Fruit Dip

This one's not 100% from scratch, but it's quick and easy. Making your own vanilla pudding is also quite simple, and will taste better! This makes a great, light and fruity dessert for your Memorial Day or beach picnic. Just bring along your choice of fruit, and enjoy the summer breezes!

Hawaiian Sunset Fruit Dip

Ingredients:

fruit potpourri

1 (3.4 oz) package Instant Vanilla Pudding Mix
1 1/4 cup cold milk
1/2 cup sour cream
1 (8 oz) can crushed pineapple, undrained
1/3 cup shredded coconut
Fresh fruit for dipping – melon, apple, strawberries, kiwi, orange, peach, mango, papaya, etc.

Directions:
  • In a large bowl, put the pudding mix and milk and whisk together until smooth, then add the sour cream and whisk to combine.  With a spoon, stir in the pineapple, with the juice, and the coconut.
  • Cover and put in refrigerator for at least an hour.
  • Serve cold alongside fresh fruit for dipping.

Recipe: Island Burgers with Grilled Pineapple Salsa

Whether you're planning a beach themed picnic as we mentioned Monday, or just wanting to spice up your grilling choices this Memorial Day, these tasty burgers will hit the spot and bring a sweet and spicy taste of the islands to your plate wherever you may be spending your holiday!

Island Burgers with Grilled Pineapple Salsa

Ingredients:

2 lbs. ground beef
salt and black pepper
dash garlic salt
1 pineapple, peeled and sliced lengthwise
1 sweet red bell pepper, diced
1/8 cup pickled ginger, diced
1/8 cup soy sauce
1/8 cup rice wine vinegar
pinch salt and black pepper
hamburger buns

Directions:
  • Heat grill to medium.  Brush lengths of pineapple with cooking oil and place on grill.  Cook, turning a few times, until pineapple is hot and has good grill marks.  Remove to cutting board and allow to cool.
  • Cut pineapple into small pieces and put in bowl; add sweet red bell pepper, pickled ginger, soy sauce, rice wine vinegar, and salt and pepper; toss to combine, taste and adjust seasonings.  Refrigerate until burgers are ready.
  • Turn grill up to high for burgers.  Form the beef into1/2 thick patties, season with salt, pepper, and dash of garlic powder.
  • When grill is ready, cook burgers 3 to 4 minutes, flip, then continue grilling for 3 to 4 minutes or until done as desired.
  • Serve hot burgers on hamburger buns (toasted on the grill if desired) with a large spoonful of chilled pineapple salsa.

Creating A Beach-Style Memorial Day Picnic

Memorial Day marks the unofficial start of summer for most people, and it's a great time to go to the beach for a picnic. But even if sand, surf, and sun are on your mind, but you can't easily get to the beach this Memorial Day weekend, you can still enjoy the feeling of being there. Why not have a beach-style picnic, complete with food, props, and music to make it seem like you're spending a day with “beach blanket” movie favorites Frankie Avalon and Annette Funicello?  Let's take a look at how to spend a day at the beach when water is nowhere to be found:

Setting the mood for a beach-style picnic starts with the props.  A day at the beach includes beach chairs, umbrellas, big blankets, beach balls, towels, beach bags, beach pails and shovels, hats, coolers, and music.  A little background music featuring the Beach Boys or other surfin' music really sets the mood.  If you have boogie-boards or surfboards, all the better!  Even if there's not a wave in sight, surfboards make great serving tables and backdrops.

An added feature that's great fun is sand, of course.  Most any building supply house offers clean sand for sale.  Just one bag will provide enough to fill quite a few beach pails.  Stick the little shovels in and set them all around.  Sifting sand through your fingers (or toes) is a great way to relax and enjoy the 'beach.' 

If you have a few seashells sitting around, throw those around the tables and in the pails for more authenticity.  Use more sand in metal buckets to support an assortment of candles.  Use candles in shades of blues, greens, and tans to replicate the colors of the sea and sand.

For a real element of water, a small kiddie pool is the perfect addition to your backyard or park beach party.  All you need is something to splash, even if it's just to dip your feet or hands in.  Cover the bottom of the pool in sand if you're feeling especially energetic.  Pull up your beach chairs, stick your feet in, and you have an instant beach... almost!

Some people's idea of the perfect day at the beach is just sitting under the umbrella sipping a cool drink all day long.  Other people like to stay active.  Providing something to do during your beach-style picnic is relatively simple.  If you are hosting the picnic in your backyard, you already know what you have for fun and games.  Frisbees, badminton, and volleyball are obvious beach games.  A park may offer other distractions like horseshoes and jungle gyms, or even walking trails.  Take advantage of what you have, then gather for refreshments under the umbrellas to cool off.

Feed the Beach Bums

A day at the beach, even the pseudo-beach, can really work up an appetite.  Planning a beach style picnic when you're not going to the beach can actually work to your advantage.  Public beaches don't often allow cooking on the beach.  However, many park facilities, or your own backyard, of course, will offer grilling or even a campfire spot.  With these options, you can  enjoy standard beach-style food for your Memorial Day picnic, like burgers, hot dogs, and, of course, marshmallows and S'mores.

Along with campfire food, you want to include delicious options for foods that satisfy the beach-goer's appetite.  Many folks aim for the simple things when they're deciding on what to bring in their beach coolers.  Finger foods, pre-made salads, sandwiches, and the like are favorites for beach time food.  But, that doesn't mean you can't be a little creative with a few culinary surprises for your hungry guests.

For instance, you could marinate some vegetables in advance in a light dressing for an appetizer. Homemade dips, cold cocktail shrimp, and pate could be served with hearty crackers or pita bread. Try thin-sliced turkey with fresh vegetables like cucumber, avocado, and tomatoes, wrapped inside Armenian flatbread similar to soft tortilla wraps for a filling dish that's easy to eat, and delicious, too.

A fruit salad can provide ample opportunities for creativity, but you want to think outside apples and oranges. Include nectarines, blueberries, and blackberries with a little fresh ginger and a squeeze of lime juice for a simple yet splendidly refreshing treat.  Cut up a real watermelon with seeds for a genuine seed-spitting contest (along with wonderful refreshment) and you've got a real live beach party.

An Oasis of Drinks

Summer beach picnics call for plenty of iced tea with fresh mint.  You could also bring freshly squeezed lemonade which evokes memories of long ago... times spent relaxing in chairs lined up to enjoy the expanse of water and the much anticipated sunset.  Go ahead and freeze the lemonade in freezer bags, then set in coolers if you are traveling.  By the time you get to your destination, they will thaw and be ready to enjoy.  The added advantage is the frozen bags of lemonade add chilling to the cooler for your foods.

Of course, depending on the ages and preferences of guests at your beach picnic, you may enjoy sodas or fruit mix drinks as well as spirits like beachy mixed drink favorites for grownups. Remember, you want to create an illusion of sun, surf, and sand, so whatever beverages come to mind are perfect.  If you're thinking of mixed drinks of any kind, freezing the fruit drink beforehand in freezer bags, then mixing with soda or spirits upon arrival gives you infinite options for beverages for young and young-at-heart alike.

Dig Those Crazy Desserts

Keep sweet treats light and breezy, just like a day at the beach.  Try a simple parfait made with yogurt, granola, and the fruit of your choice. Or, try a lighter dessert bread or crumb cake instead of the standard fudge brownies, pies, or gelatin molds found at most picnics.

If frozen treats are part of your beach time memories, go ahead and freeze popsicles or ice cream in any form you like.  Ice cream should be frozen quite a bit harder than you would normally eat it before transporting.  Keep them on the bottom of the cooler, piling your salads or sandwiches on top. For extra protection, wrap them in several thicknesses of newspaper.  Depending on the heat, your frozen treats should stay relatively solid for some time.

Another easy trick for a cold dessert at a beach picnic, whether you're at the beach or doing a faux-beach picnic, is to freeze fruit in the can.  A good choice is canned pineapple or peaches.  Transport the frozen cans (another advantage is they serve as 'ice' in coolers) to the picnic spot.  When ready to serve, open the can and push the semi-frozen or “slushie” fruit out of the can and serve in a paper funnel cup, with a spoon and a straw.  You can pour in a little fizzy clear Cola or Ginger Ale for a real summertime treat.

Head to Toe to the Beach We Go

No matter what you include as a backdrop for your special beach party picnic, it's still the clothes that bring the whole thing together.  Yes, a swimsuit, sunglasses, sarong, sandals, and big floppy hat just scream BEACH!  So be sure you set the mood first with your style. 

Loose flowing garments are just fine if swimwear is not suitable.  Choose caftans or other flowing garments of lightweight gauzy fabrics or linen.  Dig around in your closets to find loose fitting lightweight shirts or pants of any kind. You're going to set the “scene” for your guests and have a lot of fun in the doing.

As you can see, the idea for a beach-style picnic is to be informal and breezy with the setting, table, music, food, drinks, and even the clothing, and it's perfect for a Memorial Day Party!  The success of a beach-style picnic depends on your ability to sway like an ocean breeze and let the mood capture your guests.  Enjoy the rhythm of the islands... and each other this Memorial Day!

Memorial Day Picnic - Fun Grilling Ideas

Think of warm weather, summertime, and outdoor activities, and you'll soon be thinking of planning a picnic.  There's nothing like sharing food in the great outdoors to give you plenty of reasons to smile.

Firing up the grill for a picnic usually brings on thoughts of hamburgers, hot dogs, and barbecued chicken. That's all dandy and certainly delicious, but wouldn't you like your grilled food to stand out a little from the rest?  Perhaps there are ways to present old favorites on the grill in new ways, or even try something completely different.  Here are a few thoughts about new ways to grill up some summertime dishes this Memorial Day (or just any warm summer day when you want to do something a bit special):

Rethink the Sauce
One popular ingredient in many grilled main dishes is barbeque sauces and other types of glazes and marinades. There are hundreds if not thousands of recipes to add more flavor to whatever you're cooking. If you have been grilling for many years, you've probably made your own sauces or have found a few favorites. But, maybe it's time to rethink those sauces.

Begin by experimenting with a whole range of ingredients.  Don't limit yourself to the ingredients you've been using.  We know you automatically pull out the mustard, ketchup, brown sugar, vinegar, and honey, but what else is there to make a sauce for the grill?

Take a look first in the fruit bin. Consider the lemons, limes, oranges, apples, and yes, even the watermelon, strawberries, blueberries, and kiwis.  Now, pull open the vegetable bin and grab the fresh tomatoes, cucumber, bell peppers, celery, onion, and even avocados.  Turn to your pantry and take out the apple jelly, orange marmalade, maple syrup, raisins, dried cranberries, red wine vinegar, tarragon vinegar, and all the dressings, including Ranch, French, Thousand Island, and Green Goddess.  And, don't forget the spice rack.  There is basically nothing off limits – grab it all.

Don't be afraid to grate, smash, or simmer ingredients together that you might never have used in the same sauce before. Combine contrasting flavors – savory with sweet, tangy with smooth, creamy with crunchy – until you have a unique sauce that you can call your own.

Now, marinade, glaze, or brush the sauce onto whatever you are grilling.  Try a fruity white sauce on meat; a tomato-based hot sauce on fish; or a savory herbed sauce on fruit.  Put it on the grill and see what happens.  You'll have completely new dishes that will perk up and surprise the taste buds.  And, isn't that what grilling is all about?

Rethink the Main Dish
If you're used to throwing a steak on the grill, but want to experiment with other cuts, try grilling full roasts.  With the right preparation and setup, you can put a big beef roast or pork roast on the grill, either in a rack or on a rotisserie and surprise your family and guests with a tender and juicy roast that didn't require heating up the house with hours in the oven.

Instead of your usual cut up chicken pieces, wings, or legs, try grilling a whole chicken.  The juices stay in a little better when the chicken is whole.  Not sure you have time for a whole chicken?  You can also “butterfly” a chicken by cutting out just the backbone and pushing it down flat, keeping the chicken whole but providing a flattened version that cooks up in no time.

Fish is another grilling favorite at picnics.  Use fish that is firm and solid so it grills well and doesn't fall apart or become dry.  Oily fish like salmon is perfect on the grill, but there are many other types of fish that work equally well.  Fish grills best when you don't have to flip it with a spatula, that's why you want to invest in a grilling basket which encloses the fish and you flip the basket over easily with the fish inside it.

Other seafood that's perfect picnic food for the grill includes shrimp, scallops, and lobster.  Shrimp can be grilled unpeeled to help keep them from overcooking.  Lobster can be grilled in the shell, as well.  Use a tray made for the grill with smaller slots to keep smaller seafood, like shrimp and scallops, from falling through.  Marinate the seafood in a variety of flavors for a different flavor each time you have a grilling picnic.

You say your taste for a juicy grilled burger is too powerful to ignore?  You've still got lots of choices for variety at your picnic. You can dress up your burgers inside-and-out with many different flavors.  Remember; beef isn't the only burger in town!  Ground turkey, pork, or chicken are great substitutes for those who want a different kind of burger at this year's picnic.  But, don't stop there.  Salmon and crab meat make great grilled patties, too. And of course there's my favorite - venison.

Besides what goes into the actual patty, think beyond conventional recipes and marinate your ground meat or fish with anything from red wine to a mixture of Worcestershire, soy sauce, or steak sauce, lemon juice, or balsamic vinegar.  Add to the inside of the burger, or as condiments, a variety of flavorful cheeses, hot or mild peppers, nuts, and salsa.  Instead of throwing a raw onion on top, caramelize some onions in a cast iron skillet on top of the grill over low heat.  The incredible sweetness will surprise and delight you and your guests.  These are no longer your grandpa's burgers!

Sometimes, you need to rethink the way you prepare your main dishes at a grilling picnic to make serving simple. Think shish-kabobs and you hardly even need to bring plates!  These bite-size pieces are a great way to cook, serve, and eat your favorite foods easily at a grilling picnic.  Alternate cut up meat, meat balls, poultry, or seafood with grape tomatoes, chunks of sweet onions, peppers, zucchini, yellow squash, or mushrooms.  Some foods lend themselves very well to a tropical taste, too.  Include pineapple chunks or citrus with chicken or seafood for a taste of the islands.

Rethink the Dessert

Sure, you can serve popsicles and watermelon, but the grill is right there, all fired up.  Isn't there something you can do to put it to work creating delightful desserts?  You can start with the old stand-by and toast marshmallows, but don't stop there.  Keep going and put together 'S'mores' using the classic ingredients of toasted marshmallows, graham crackers, and a chocolate bar.  Or, you can create unique varieties using toasted marshmallows with things like oatmeal cookies, peanut butter cups, white chocolate, and flaked coconut as possible ingredients. You'll have lots of fun coming up with your own distinct creations here.

Expanding on the dessert theme is easier than you might think with a grill.  For instance, go ahead and cut up that watermelon you brought... but wait.  How about grilling it before serving?  Yes, you can grill watermelon, too.  Cut it off the rind, into about one inch thick pieces.  Grill quickly on both sides until grill marks show.  Put it on a plate and drizzle a tiny bit of balsamic vinaigrette over each piece.  The tangy saltiness of the vinaigrette compliments the sweetness of the watermelon in an unbelievable way.  Now THAT'S a grilled picnic delight!

You can also choose dessert classics that can be grilled, like pound cake with fruit compote or simple berries tossed together in a grilling basket until just lightly charred.  You can make banana boats in foil filled with mini marshmallows and chocolate chips, or perhaps your tastes lean toward grilled apple slices topped with a syrup of brown sugar and raisins.  Grilled pineapple rings is another classic.  Serve these simply on a plate as they are or use them to top slices of angel food cake or pound cake with a drizzle of chocolate.

As you can see, you can grill just about anything you want to serve at your picnic.  Even if you choose to serve sandwiches, why not grill them?  When you fire up your grill for your picnic, don't limit the menu to hotdogs and hamburgers.  Use your imagination.  If you can cook it, you can grill it!

Cooking Light for Memorial Day

Memorial Day is a special holiday for Americans. We celebrate this day to honor those before who have served their country and those who serve today. Brave men and women have dedicated their lives to the service of our great nation, some of them at the cost of those lives. For this reason it is important that we dedicate one day each year to remember and honor their sacrifices. The downside to our Memorial Day celebrations is a menu that lingers with us in the form of calories well beyond the festivities of the day. If you're looking for a great way to enjoy the day without feeling deprived and still avoid some of the heavy hitting calories that we consume far too many of on a normal Memorial Day there is help to be had. Keep reading to discover some excellent methods for cutting calories from your Memorial Day feasts.

1. Grill your chicken instead of frying it. Fried chicken has for a very long time been a favorite among those celebrating almost any occasion - particularly in the south. However, this packs on unwanted calories that would be better spent on dessert rather than the main course. Another thing you can do is to skip the sauce. By this, I mean barbecue sauce. There are plenty of great rubs that Some chicken, pork and corn in the barbequeImage via Wikipediacan be used on your beef, pork, and chicken that pack a powerful punch when it comes to taste and leave off those pesky calories that sugar filled barbecue sauces add to your favorite dishes.

2. Have salad as a side. In addition to salad as a healthy side option, include fresh cut up vegetables and low fat dressing as a dip for sides as well as appetizers. By having these available for your guests you may be surprised to discover that others appreciate the healthy options just as much as you do. Even cooked vegetables that aren't dripping in cheese sauce, butter, or other types of fats provide a better option than high carb, high fat sides such as macaroni and cheese, potato salad, and mashed potatoes.

3. Have fruit on hand to help diminish the craving for sweets. While I would not dream of completely depriving you of dessert, I recommend two steps to help make the fight against fat a more survivable contest of wills. First, have at least one sugar-free dessert option available for those that are dieting, and offer fruits. By combining the healthier sweet treat of fruit with a delicious sugar free dessert in a smaller portion you are doubling the health benefits. Finally, homemade ice cream has for a long time been a favorite family tradition for Memorial Day, Independence Day, and Labor Day. You do not have to say no to all the good things in life even if you are trying to watch what you eat. By eliminating the empty calories many of us consume in sugary drinks, and following the steps above you just might find that ice cream is a delicious option for you after all without completely blowing the good work you've done. (For a special red, white, & blue treat, try some berries - from the tip above - over your ice cream!) Just remember that moderation is the key.

If you allow yourself a taste of the really good stuff along the way you will be much less likely to fail in your healthier living efforts. In addition to watching the calories you put into your body on Memorial Day be sure to take stock of the calories you burn. Go for a walk, take a hike, pick up a game of flag football with the family, or dance with the little ones in the afternoon. Consistent efforts to burn more calories while consuming less will net the greatest results whether it is a holiday or not.

And most of all, remember what we are celebrating for, and enjoy the company of your loved ones!
